
Roasted Beets & Carrots Salad
This vibrant and flavorful salad is a perfect combination of sweet, earthy, and creamy flavors.

Ingredients
1 large beet, peeled and cut into wedges
2 large carrots, peeled and cut into wedges
1 tablespoon of olive oil
½ teaspoon salt
¼ teaspoon black pepper
½ cup arugula
½ cup crumbled goat cheese
1 ball of burrata cheese
¼ cup balsamic glaze
Directions
Preheat oven to 400F (200C)
Roast vegetables: Toss the beets and carrots with olive oil, salt, and pepper. Place on a baking sheet and roast for 20-25 minutes, or until tender.
Assemble salad: In a large bowl, combine the roasted beets, carrots, arugula, and goat cheese.
Add burrata: Place the burrata cheese on top of the salad. Drizzle balsamic glaze over the salad.
Tips: For a sweeter salad, drizzle with honey instead of balsamic glaze. Add a handful of toasted pine nuts or walnuts for extra crunch. Serve with grilled chicken or fish for a complete meal.
