Shaved Brussels Salad

A light and delicious dish to dispel all childhood myths about brussels sprouts!

Ingredients

1 ½ lbs Brussels sprouts, shredded
½ cup chopped dried apricots
¾ cup chopped red onion
¾ cup goat cheese crumbles
½ cup chopped fresh parsley
Salt


For the dressing:
Juice of one large orange
⅓ cup olive oil
1 ½ tbsp honey
2 tbsp white wine vinegar
1 tbsp whole-grain mustard
½ tsp salt
½ tsp paprika
2 tsp orange zest
1 garlic clove minced

For the pecans:
⅓ cup pecans
2 tsp olive oil
½ tbsp honey
¼ tsp salt
Pepper to taste
1 tsp dried rosemary

Directions

Preheat the oven to 400F (200C).

Make the dressing. Add all ingredients to a jar with a lid. Add the lid and shake vigorously until well combined. Make the pecans. Add all ingredients and mix to combine.

Place the pecans on a baking sheet and bake for 7 minutes. Once the tray has cooled, chop them up.


Assemble the salad:

Add all ingredients to a large bowl, add the pecans and the dressing, and toss to combine.
