Carrot Cake Energy Balls
A power-packed, guilt-free snack!

Ingredients
1 large carrot (about 100 g / ¼ lb)
50 g (½ cup) quick or regular oatmeal (organic)
About ten large pitted Medjool dates (about 155 g/1 cup)
25 g (1/3 cup heaped) unsweetened shredded coconut, plus a little more for rolling the balls
2 Tbsp. chopped walnuts, or more to taste (optional)
1 tbsp chia seeds
½ tsp. teaspoon of ground cinnamon and a pinch of nutmeg
1 pinch of fine sea salt
A little water if needed
Directions
1) In the bowl of a food processor, grate the carrot.
2) Without cleaning the mixer bowl, add the oat flakes and pulse a few times to reduce them to a coarse powder.
3) Add the rest of the ingredients, the reserved grated carrot, and mix in the food processor until it forms a thick, homogeneous paste with a little texture. Using a flexible spatula, scrape the edges of the food processor bowl as needed or add a little water.
4) Add grated coconut to a plate. With slightly damp hands, form around fifteen small balls. Roll them in coconut. Store in the refrigerator for up to 5 days, or freeze and thaw for a few hours (or overnight) in the refrigerator before enjoying.
*Makes 15 small snack balls
